It’s tough when you suddenly have to give up all grains, especially giving up bread is not easy!
Fortunately, there are still a few alternative ingredients like buckwheat or chickpeas.
Since I’ve been following the Candida diet, I’ve become particularly fond of Farinata.
Farinata is a very flavorful, Italian flatbread made from chickpeas, baked at a high temperature. The ingredient list is short and a silicone baking mat is recommended.
Ingredients
- 230g chickpea flour
- 600ml lukewarm water
- 50ml olive oil
- 1 teaspoon salt
- chopped rosemary
- turmeric, cumin, chili, pepper, …
Preparation
First, combine the flour with salt and rosemary in a large bowl. Then, while stirring with a whisk, gradually add the water. Ideally, let the mixture rest for at least 3 hours, better overnight, in a cool place.
Preheat the oven to 230-250°C on convection setting.
Meanwhile, add the spices and olive oil to the dough and stir vigorously again. Place the silicone baking mat on a baking sheet and pour the dough onto it.
Finally, bake for 30 minutes, best served fresh.
